Dear Ruhl,
The trade-off is perhaps, minimal if at all. Depending on how the vegetables and fruit are cultivated, handled, stored and cooked, the micronutrient availability is perhaps variable and even, minimal.
You need not worry about having overdoses of anti-oxidants from natural sources because they do not contain megadoses to begin with, even if eaten garden fresh or plucked off the tree. Do be careful how you are getting your vitamin A though, because some natural sources of vitamin A (e.g. bear liver) can contain toxic amounts of vitamin A.
You might worry though, if you are taking anti-oxidants in supplement form. From reading various posts here and other articles, it can be safely said that anti-oxidants in megadoses (several grams of vitamin C, E etc) will hamper hypertrophy but will also kill you if the megadose becomes an overdose.
It is good though, if you have ample leafy vegetables and some fruit. More often than not, people have too little of these and that's one good way health problems can arise. Yo do need some bulk for optimal gastric motility. Fermentation of fibre in the hindgut has health benefits that fermentation of excess protein can never offer.
In short, tuck in, enjoy the fruit and vegetables. Their healthful elements are more likely to augment than retard hypertrophy.
Godspeed, and happy HSTing
